beets, apples, and bananas: OH MY!

Official Day 2 of this gluten free journey is complete! The morning started out strong, thanks to my Vitamix Blender and my farmer's market eggs!

Recipe for a super tasty and healthy smoothie:
1/2 apple
1/2 banana
1/2 beet (yup it says beet...you didn't read that wrong)
handful of kale
plethora of frozen organic blueberries
heaping tablespoon of raw almond butter
water---the most expensive thing in my smoothie ;-)
** Blend on high for 45 seconds to enjoy a breakfast that's gluten free, healthy, easy and tasty!!!

Snack time consisted of day-old kale chips...not so crispy or crunchy! Still edible but would love some advice on how to keep them fresh and crunchy a day later!

Lunch was a little trickier because unfortunately we didn't go grocery shopping last night, so we were lacking in the vegetable department! I enjoyed some tasty chicken and fresh pineapple from last night's grilling session with my dad! So thankful that my lovely fiancee went to the grocery store and bought loads more veggies for this week! Phew!

Dinner was yummy and easy! STEAK, roasted baby potatoes and salad! Thanks again to Sarah for making a delightful gluten free dinner!


I also enjoyed a tasty gin and tonic. I was writing this entry, though, I thought to look up whether gin was gluten free, and...it's questionable. According to my research, gin is one of those uncertain liquors. Apparently the way it is distilled should remove all of the gluten proteins, but for people with Celiac's and those that are starting out gluten free diets, it should be avoided...fail! Okay, so that's the learning portion of this journey!

*for those trying gluten free but still wanting an adult beverage (read: MICHELLE), feel free to try: potato vodka, rum, wine, high-end tequila that is actually made with agave, and gluten free beer!

Tonight we are taking "before" pictures and measuring my waist-line to provide the "evidence" my little scientist brain needs to make this all worth it.
