Grill Master...maybe "grill pansy"!

Day 4!
I feel like I am missing something crunchy without having gluten products! This morning I decided to treat myself to something crunchy by eating Udi's gluten free bread! Probably one of the better gluten free breads out there, but something to be mindful of: as my doctor has reminded me (and as I have found in research articles), just because an item is gluten free, it doesn't necessarily bode well in the health department! When gluten is removed from items, it's typically replaced with corn, lots of butter and sugar! That combo is not great for your body in large doses so really a gluten free diet does mean meat, fruit, and veggies! And not eating a lot of replacement foods which are high in calories! I found this same dilemma when I was a vegetarian for a hot second...a majority of alternative meat items are high in soy and too much soy is not good for you! Lots of research out there about it! In other breakfast-related news: Based on yesterday's "dirt smoothie" peanut gallery, I decided to take the skin off the beet in today's smoothie and, apparently, it helped take away the "dirt" taste!

Lunch was leftovers from last night's dinner! It was surprisingly still fantastic! I was expecting an odd texture when I reheated the pasta but I found myself wanting more of the whole dish!

Those beanito chips hit the spot again for snack time! I was wishing I had some fresh fruit. Note to self: bring some fruit with you on busy days!

Dinner was quite the adventure! Apparently my dad and Sarah had a conversation about how I was going to be the grill master...probably because I am the one who likes to cook more (for the record, she is a great cook but I think she prefers to be the assistant!). But as we discovered this evening, while I am great at getting the food prepared for the grill, I am not so great at mastering that grill! Hence the name "grill pansy"! We cooked salmon on cedar planks and threw some asparagus basted in some oil on the other side of grill! The salmon had a tasty combo of spices and was oh so flavorful! And thank goodness risotto is gluten free! Probably a saving grace for me since it was already a staple in our diets! And it's even better that wine is gluten free! Yummy! P.S. Not sure if any one is watching Top Chef Texas but they just showed the episode at Salt Lick BBQ...I sure hope their sauces are gluten free because I need to go ASAP!

  1. Hey Michelle! Another great gluten free pasta is Quinoua Pasta by Ancient Harvest. Tastes like "regular" pasta and also re-heats well. I've found it at whole foods :) If you're looking for relatively healthy chips that are crunchy, Flamous brand Falafel Chips are delicious, which come in regular and spice (both great), and I also found them at whole foods! They are good to dip in Hummus. Another good crunchy snack is celery, and if you need a little more, you can dip it in almond butter!

    P.S. I had Cupcake Red Velvet wine last weekend and LOVED it too :)
